Another one of those just-an-idea posts, inspired by an al fresco lunch at Pentimento on Long Island: season and sear fresh tuna; remove from pan and dice; sweat minced garlic and shallots in evoo in same pan; add baby kale (or spinach or other baby greens) and cook until just begins to wilt; add cooked pappardelle pasta, some pasta water, lemon juice, grated parmesan cheese, and more evoo; stir to emulsify and create a sauce; toss in diced tuna at the very last minute just to warm; garnish with sliced scallions and more grated parmesan.

andouille chicken sausage with grapes
Not the prettiest dish, but hearty and tasty. I used this recipe for Sauteed Sausages with Grapes and Balsamic Glazed Onions from Fine Cooking, made a few little changes, and served it over raw Tuscan kale.
3 tsp canola oil
4 andouille chicken sausages (I used precooked because it was all I had on hand, but uncooked is best)
1 medium onion, thinly sliced
3 cloves garlic, minced
3 Tbsp balsamic vinegar
1/2 cup low-sodium chicken broth
1 cup red seedless grapes (if they’re small, leave them whole; otherwise, cut in half)
1 pound Tuscan kale, ribs removed, cut into 1-inch thick slices
Juice of 1 lime
Kosher salt and freshly ground black pepper
1. Heat the oil in a heavy-bottomed pan over high heat. Add the sausages and cook until brown on all sides, about 8 minutes total.
2. Remove the sausage, lower the heat to medium, and add the onion to the pan. Cook for about 15 minutes, stirring occasionally, until soft and golden brown. Add garlic and cook for an additional minute.
3. Deglaze the pan with balsamic vinegar, scraping the bottom of the pan to loosen the brown bits, and reduce by half.
4. Add the chicken broth and grapes, and nestle in the sausages.
5. Bring to a boil, then reduce to a simmer and cook until the liquid has reduced by about half and the sausages are cooked through, about 15-20 minutes.
6. Meanwhile, massage kale with lime juice, salt, and pepper and place on a platter.
7. Serve sausages, grapes, and onions over the kale salad.
kale, delicata squash, and avocado
1 delicata squash
2 tsp olive oil
Kosher salt and freshly ground black pepper
1 bunch lacinato kale
2 avocados, diced
Juice of 1 lemon (or 2 limes)
2 Tbsp extra-virgin olive oil
1. Preheat oven to 425 F.
2. Halve the squash lengthwise. Remove seeds and slice into 1/2 inch pieces. Toss with 2 tsp olive oil, salt, and pepper.
3. Spread squash out on baking sheet and roast for about 10-15 minutes, flipping the squash halfway through.
4. Remove ribs from kale leaves and thinly slice crosswise.
5. In a bowl combine squash with kale, avocado, lemon (or lime) juice, and extra-virgin olive oil. Season with salt and pepper and toss to combine.
seared tuna with kale and mushrooms
1/4 cup low-sodium soy sauce
1/4 cup rice wine vinegar
juice of 1 lime, divided
1 inch piece ginger, peeled and grated
1/4 tsp chili pepper powder (or cayenne) or sriracha
2 cloves garlic
1/2 pound fresh tuna steaks
1 small leek, white and light green parts only, thinly sliced
Kosher salt
1 Tbsp olive oil, divided
10 oz cremini mushrooms
2 bunches kale, torn
1. Combine the soy sauce, vinegar, half the lime juice, ginger, and chili pepper powder in a shallow pan.
2. Grate one of the garlic cloves into the pan and whisk together ingredients.
3. Place the tuna steaks into the pan and marinate for 30 minutes to an hour, flipping halfway.
4. Combine the leeks and the remaining lime juice and refrigerate for at least 20 minutes.
5. Preheat oven to 200 degrees F.
6. Remove tuna from marinade and shake off excess, removing any bits of garlic or ginger.
7. Season with salt and pepper on both sides.
8. Heat 2 tsp olive oil in a non-stick pan over high heat until the first whisp of smoke.
9. Add the tuna to the pan and sear for 1 minute on each side. Remove and keep warm in the oven.
10. Heat the remaining 2 tsp olive oil over medium high in a separate pan.
11. Add mushrooms to the pan and cook, stirring occasionally, until golden brown.
12. Mince the remaining clove of garlic and add to the pan. Sauté for about 30 seconds.
13. Add kale to the pan one handful at a time. Season with salt and pepper and cook until wilted.
14. Plate the greens and top with the seared tuna.
15. Garnish with marinated leeks and a dash of chili pepper powder, if desired.
