Bold without being “in your face”, this winter salad takes advantage of raw shaved Brussels sprouts, which gives crunch and a mild cabbage flavor. Crispy potatoes add another layer of texture, and cheddar cheese lends a pleasant tang. The whole thing is drizzled with a bright honey mustard dressing, bringing all the flavors together.

1 pound fingerling potatoes, halved
1/4 cup plus 1 Tbsp. olive oil, divided
kosher salt and freshly ground black pepper
1 pound Brussels sprouts, trimmed and halved
1 apple
Juice of 1 lemon
6 oz pecans, roughly chopped
5 oz extra-sharp cheddar cheese, small dice
1 Tbsp whole-grain mustard
1 tsp Dijon mustard
2 tsp honey
2 Tbsp apple cider vinegar

1. Preheat oven to 425 F.
2. Toss potatoes with 1 Tbsp. olive oil, salt, and black pepper. Spread out on a sheet pan and roast for 30 minutes, or until dark golden brown and crisp. Transfer to a large bowl.
3. Thinly slice the brussels sprouts and add to the bowl.
4. Thinly slice the apple and then cut into matchsticks. Toss with lemon juice and add to the bowl.
5. Add pecans and cheese to the bowl.
6. Whisk together the mustards, honey, and vinegar. Slowly whisk in 1/4 cup olive oil until emulsified.
7. Drizzle honey mustard vinaigrette over the salad and toss to combine.

A spin on a dish my dad and I made this past Christmas dinner. Beef Wellington (pate, mushroom duxelles, the whole bit) was served with roasted yukon gold potatoes and shallots, and a salad of shaved brussels sprouts, walnuts and apples julienne with a brown butter vinaigrette. Round two, here we go:

24 oz baby yukon gold potatoes
3 tbsp cup olive oil
salt and pepper, to taste
10 oz brussels sprouts
1/2 apple (I used a Granny Smith for its tartness, but any crisp, firm apple will work)
4 oz pecorino, broken into small chunks
Zest of 1 lemon
Juice of 1 1/2 lemons

1. Preheat the oven to 425 degrees.
2. Toss the potatoes with 1 tbsp of the olive oil, salt and pepper, to taste. Roast for about 25 minutes or until fork-tender.
3. Meanwhile, trim the ends off the brussels sprouts, halve, and thinly slice.
4. Julienne the apple (and leave the skin on, will ya?).
5. Halve the potatoes and toss with the brussels sprouts, apple, pecorino, lemon zest and juice and the rest of the olive oil. Season with salt and pepper, to taste.

photo(2)This dish will do as a side, but I’ve been mackin’ on it for dinner the past few days and have not been sorry about it. You won’t be either.

One of my favorite veggies, Brussels sprouts are quirky, adorable, stinky and–gulp–healthy. They are surprisingly versatile, but for this preparation, I stuck to simple.

Steam the Brussels sprouts whole until tender. Saute over high heat in brown butter, adding thinly sliced garlic about halfway through. Once the garlic is golden brown and the outer leaves of the sprouts have blistered, season with S & P and be done with it.
