peanut butter balls
This makes a kick ass breakfast that covers all the bases: complex carbohydrates, protein, and healthy fats. Medjool dates sweeten the dish naturally, and a dash of cinnamon adds a subtle layer of complexity. Also serves as an awesome snack or healthy dessert.
260 grams medjool dates, pitted
100 grams rolled oats
30 grams flax meal
180 grams natural peanut butter, or other nut butter (I used half peanut butter and half almond butter)
pinch ground cinnamon
pinch salt
1. Combine all ingredients in a food processor and pulse until combined, adding 1 tsp of water to help everything come together.
2. Line a sheet pan with parchment paper.
3. Roll the peanut butter mixture into balls–whatever size you desire–and place on the sheet pan. Refrigerate for 30 minutes, or overnight.
4. Keep refrigerated and grab them whenever the mood strikes.
